After careful manual harvesting and drying in a fruit cellar, it ferments slowly for 30 days and ages for 12 months in French oak barriques. The result is an intense ruby red, with aromas of cherry, plum, candied fruit and vanilla. On the palate it is full, soft, with enveloping tannins and a long finish on tones of dried fruit. With its 120 g\/l of residual sugar and 15% alcohol, it pairs perfectly with chocolate desserts, dry pastries and blue cheeses.
