Over time, the bouquet evolves into notes of \u003cstrong\u003esage and chamomile\u003c\/strong\u003e, revealing great complexity. The vinification combines steel and new oak barriques, followed by aging on the lees for 4-6 months with bâtonnage, to give roundness and aromatic depth.
