Rosato Nero di Troia Puglia IGP 2024 BIO by Paolo Petrilli is a precise and textured organic rosé made from Nero di Troia grapes grown on the Motta della Regina estate in Lucera. The grapes are hand-picked into crates, seeking a balance between acidic freshness and ripeness. Vinification involves whole-berry destemming and soft pressing to obtain the "Lacrima" extraction; only the first pressing is added to the free-run must. The color recalls bright onion skins. Spices, red fruit, and marine notes emerge on the nose; the palate is fresh, vibrant, and savory. A distinctive, gastronomic, and unconventional Apulian rosé.

Paolo Petrilli works in Puglia with a rare agricultural vision: recovering authentic varieties and transforming them without shortcuts. After his experience growing and processing tomatoes on the estate, since 2002 he has brought 11 hectares of vineyard back to life, focusing on Nero di Troia, Sangiovese, Montepulciano, Aglianico, Bombino Bianco, and Verdellino. No international varieties, just local identity and organic farming. A simple, artisanal, and credible winery.
