Apollo Cerasuolo D’Abruzzo DOC 2023 BIO - Ausonia
The Cerasuolo d’Abruzzo DOC Apollo 2023 BIO by Ausonia is an artisanal and biodynamic rosé, an authentic expression of Montepulciano grown in the clay-limestone soils of Atri. With an intense pink color and orange reflections, it reveals a fragrant bouquet of currant, raspberry, violet, and licorice. On the palate, it is crisp, juicy, and well-structured, with a savory and smooth finish. Vinified with spontaneous fermentation and a short maceration on the skins, it ages for 10 months in steel and is bottled without corrections, preserving its territorial identity. A versatile wine, it pairs excellently with legume soups and fish, cured meats, cheeses, and dishes of mackerel or pork.

Founded in 2008 by Simone and Francesca, the Ausonia winery was born from the desire to transform a passion into a life project. Located in Abruzzo, it cultivates 12 hectares of vineyards with full respect for nature, with biodynamic certification since 2016. Ausonia wines express the authentic character of the terroir and vintages, expressing the purity of the Abruzzo region. Butterflies, the winery's symbol, represent the lightness and vitality of their approach to wine.
