Chablis AOC 2023 Chaude Ecuelle
The 2023 Chablis from Domaine de Chaude Écuelle is a dry and elegant white wine that perfectly expresses the Kimméridgien terroir of Chemilly-sur-Serein, in the heart of Burgundy. Made from 100% Chardonnay grapes, hand-harvested and vinified in stainless steel, it undergoes complete malolactic fermentation and ages for 10 months on the lees, without any oak. In the glass, it appears a bright straw yellow with greenish highlights. On the nose, it releases fresh notes of green apple, lemon, white-fleshed fruit, and aromatic herbs, with mineral nuances. On the palate, it is dry and vibrant, supported by a pleasant savory finish and a creamy texture. Ideal with oysters, crustaceans, mollusks, and refined fish dishes, it is also perfect as an aperitif or with light ethnic cuisine.

Located in the south of Chablis, the Chaude Écuelle winery takes its name from the prestigious estate where many of its vineyards are located. The Vilain family, custodians of an authentic tradition, cultivates approximately 20 hectares of vineyards dedicated to bottling, which produce wines of extraordinary purity. The grapes, sourced from select parcels, offer mineral and iodine notes that best express the unique identity of the Chablis terroir.
